Brother and Sister Pablo y Olalla


The picturesque pazo at Edmun do Val Estate was originally founded in 1790, and many of the structural relics remain imbedded into the ancient murals lining the winery’s walls. In the mid 90’s, Galician physicist and businessman Mr. Rafael Edmundo Ruibal and his wife fell in love with the property and finally agreed to purchase the estate in 1999. Inspired by their aspirations to convert the farm into a family passion project, they quickly integrated their children onto the farm, learning the business forward with a focus on their vineyards. Today, second generation brother and sister team, Olalla the winemaker and her brother Pablo who does a sparkling job of sales and marketing, run the gorgeous estate and together they manage the daily operations of the winery with their beloved dog “Otto”. The overall philosophy at Edmun do Val is to produce high-quality Alvarinho from their organically farmed estate vineyards, and to age them under lees for an extended period of time to tame that marked acidity that this grape, from this region, exudes. Sustainably farmed to cultivate natural biodiversity and long-term soil fertility; the more love and work that goes into the vines, the greater the expression of the wines - this is the essence of Adega Edmun do Val.
